I tend to have a lot of apples all at once and the kids have a *habit* of getting bored with my go to apple recipes. I don’t why I didn’t think of mixing chocolate and apples in cake form before but I had the bright idea one day and I am glad I finally thought of this combination. I found this recipe from Beyond the Chicken Coop, adapted it, and it has now been consumed multiple times by said bored kids.
Ingredients
- 3 whole eggs
- 1 1/2 cups of sugar
- 1/2 cup of apple fresh cider or water
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1/4 teaspoon salt
- 2 cups grated tart apples (about 2 apples)
- 1 cup chopped walnuts
- 1 cup chocolate chips
Directions
-
Cream together eggs, sugar, butter, water, and vanilla.
-
Mix flour, cocoa powder, baking soda, cinnamon, allspice and salt in a separate bowl. (OR if you’re like me, you just add it all to the wet mixture, one less dirty bowl.)
-
Add dry mixture to creamed mixture.
-
Fold in walnuts, chocolate chips, and apples. (I just grate the apple over the bowl)
-
Place into a bundt pan that has been sprayed with a non-stick spray and dusted with flour.
-
Bake at 350 for 60 – 70 minutes.
-
Allow cake to cool before removing from pan.
